Christmas Ale Caramels

INGREDIENTS

2 12 oz. Great Lakes Christmas Ales
1 3/4 sticks butter
1 cup brown sugar
2 cups granulated sugar
1 cup corn syrup
1 cup heavy cream
1/2 tbsp sea salt

METHOD

  1. Preheat a skillet over medium high heat.
  2. Add beer, bring to a boil, and reduce until you have about 2 tbsp of syrup left in the pan. Set aside.
  3. Melt butter over medium high heat, then add both sugars, corn syrup, and heavy cream.
  4. Stir until it begins to boil. Let it sit untouched until it reaches 240 degrees. (A candy thermometer helps!)
  5. Line a 6 x 9 sheet pan tray with parchment paper and carefully pour in the caramel to let it cool for 3-4 hours.
  6. Once cooled, top with sea salt. Cut into 1/2 x 1/2 inch pieces.
