Juicy Vibacious Peach Jalapeño Cornbread

INGREDIENTS

– 2 8.5 oz. boxes cornbread mix
– 2 large eggs (or, according to box instructions, then double)
– 2/3 c whole milk
– 1/3 c Juicy Vibacious Double IPA
– 1 fresh peach, finely chopped
– 1 large jalapeño, finely chopped (about 1/3 cup)
– 1 tbsp melted salted butter

METHOD

Preheat oven to 400 degrees. In a large mixing bowl, add cornbread mix. In a separate bowl, whisk together eggs, milk, beer, peach, and jalapeño. Fold wet ingredients into cornbread mix, and let rest for a few minutes.

Pour mixture into large loaf or pie pan, about 3/4 of the way full. Bake for approximately 20 minutes, or until the top is golden. Serve with your favorite chili or BBQ dish.
