Juicy Vibacious Pico De Gallo

INGREDIENTS

7 Roma tomatoes, diced
2 cloves garlic, minced
1/2 white onion, diced
1 jalapeño, finely chopped
1 serrano, finely chopped
1-2 large handfuls of cilantro, coarsely chopped
Juice of 1 large lime (or 2 if small)
Splash of Juicy Vibacious Double IPA (or try it with Mexican Lager with Lime when in season!)
Salt

METHOD

1. Chop the tomatoes, garlic, onion, and cilantro. Add to a large bowl.
2. Chop the stem off of your jalapeño and serrano peppers. Using a paring knife, carefully scrape out the seeds from the inside of the pepper. Rinse, then finely chop and add to the bowl.
3. Juice your lime onto the mixture.
4. Add a splash of Juicy Vibacious Double IPA. We recommend starting small, and adding more later to adjust the texture.
5. Toss the ingredients together in the bowl, making sure the liquids are spread evenly throughout.
6. Add salt to taste, and toss again if needed. (This is when to add more beer if you want!)
7. Sip on the rest of your Juicy Vibacious Double IPA while enjoying your Pico De Gallo with tortilla chips, or serve as a topping for tacos, quesadillas, and burritos.
