Midwest IPA Hatch Chile Queso Blanco

INGREDIENTS

1 12 oz. Can Midwest IPA
8 oz. cream cheese, softened
12 oz. shredded white cheddar cheese
1/2 tsp. garlic powder
2 green onions, diced
1 C canned roasted hatch chiles
Salt and pepper, additional chili powder/seasonings to taste

METHOD

In a medium non-stick pan, add beer and cream cheese over medium heat. Stir constantly to melt cream cheese and blend with beer. Once the cream cheese is completely melted, reduce heat to low and gradually add the cheddar, stirring until melted. Add garlic powder, green onions, chiles, salt, and pepper. Once blended, pour into serving bowl. Serve with tortilla chips, or use as a topping for your favorite nacho or taco recipe. Try adding cooked chorizo, and always pair with a Midwest IPA!
