
2 Tbsp extra virgin olive oil
1 white onion, diced
4 cloves garlic, chopped
1 Tbsp ground cumin
1 Tbsp ground coriander
½ Tbsp ground ginger
½ Tbsp cinnamon
¼ Tbsp ground cayenne
¼ Tbsp black pepper
1 bay leaf
1 C Rally Drum Red Ale
1 C ketchup
1 Tbsp tomato paste
1 Tbsp brown sugar
In sauce pot, sauté onion and garlic in oil over medium heat until soft (5 minutes). Add all spices and bay leaf and continue to stir for 2 minutes. Add tomato paste and cook for 2 additional minutes. Add beer and ketchup and raise heat to simmer for 10 minutes. Stir in brown sugar. Remove bay leaf and puree the sauce in a blender until smooth. Serve with your favorite bratwurst, sausage, hotdog, or sauerkraut.
